Chef's Corner: Packing an A+ Lunch
ORLANDO, Fla. (Ivanhoe Newswire) -- They are the experts of fun -- I’m talking about the people who work at Disney. And today, even though that summer vacation is just a memory -- one Disney chef shows us how to bring a little of that magic to your child's lunch box.
It’s back to school -- back to the books -- but it doesn’t have to be back to PB&J! Forget those boring lunches -- you can pack a lunch that your kids will actually eat.
“School has just begun and we’ve come up with some great ideas to spice up your kids lunches, make it healthy, fun and unique … here’s we’re going to start with a corn dog muffin,” Aimée Rivera, Disney Chef in Orlando, Florida told Ivanhoe.
Disney chef Aimée Rivera says it doesn’t have to be difficult to be interesting.
“We are going to try and keep it lean and healthy for the children, so we’re going to use turkey hotdogs,” said Rivera
The key ingredients for Rivera's first recipe are -- cheddar cheese, eggs, skim milk, brown sugar, any corn bread mix and turkey hotdogs. Mix the corn bread mix and brown sugar … in another bowl combine the milk and eggs -- then it all goes together -- add in the cheese. Then fill up the muffin pan.
“This is the fun part…this is where we actually make it a special muffin … we’re going to add turkey hotdogs to this … you can actually have your kids just put them in there … they’ll love that,” said Rivera
Pop them in the oven and -- these muffins are magical. And now -- to spice things up --chicken fajitas will be a hit in your kid's cafeteria.
“This is the simplest recipe you'll probably ever make,” said Rivera
The key ingredients in Rivera's next recipe are -- chicken, green bell peppers, onion and cheddar cheese. To spice things up, you’ll need -- onion powder, garlic powder, chili power, kosher salt, ground cumin, cornstarch, virgin olive oil and some water. Shake it all together with the veggies, peppers and onions -- now it’s time to cook! Add a little limejuice ... Let it cool and create a little lunchtime fiesta for your child.
“Everything is wrapped up, we’ll put our chicken fajita’s in here … we have the muffins, one for the child and one for the friend, just in case they want to share," said Rivera
