Chef's Corner: One-Arm Cooking
ATLANTA (Ivanhoe Broadcast News) -- If the idea of cooking or cooking with kids around makes supper time stressful, we've got a few easy recipes to try. You can complete a pie or side dish in minutes -- even with a baby by your side. Recipes follow report!
Sharon and Michael Jones remember the good 'ole days. Just the two of them, candlelight, music. Then ... along came little Landon!
Cooking is a little bit harder these days. That's why Cynthia Stevens Graubart is here. She's a mom to two and author of "The One-Armed Cook" -- healthy and nutritious recipes you can cook with a baby at your side.
"These recipes are good at every age and every stage. My children are teenagers ... We live such busy lives," Graubart says. "I really like having these easy recipes."
Today, she's showing Sharon how to make her super-simple pecan pie. You need crushed pecans, eggs, cream, corn syrup, butter, brown sugar, vanilla and a pinch of salt. Put it all in, blend and pour it in your refrigerated pie crust with the nuts. Bake it, and let it cool. These pies can even be frozen for up to three months.
Next, Sharon whips up an easy and colorful side dish. Steam some carrots, add orange marmalade, golden raisins, and almonds. "My son likes sweets. So, I'm thinking the goodness in the carrots might actually get eaten this time," Sharon says.
Graubart says some basic staples such as rice or pasta, beans, canned tomatoes and broths can get dinner from the pantry to the table in 20 minutes or less. Her cookbook has all types of recipes in it. From her won experience as a new mom, she recommends letting others take on the largest portions of holiday meals for now and then your turn will come back around when your children are older.
