Chef's Corner: Homeless Chef -- Smart Recipe

Roasted Beet and Pear Salad with Lemon Dressing

3 beets

1 red onion

2 garlic gloves

1 pear, peeled and cut in half

¼ cup pepita seeds

2 teaspoons olive oil

1 teaspoon lemon juice

¼ teaspoon salt

Directions:

1. Place beets, red onion, garlic cloves and pears in a roasting pan. Drizzle 2 tablespoons of olive oil on top. Top with a lid. Bake in the oven for 45 minutes.   Remove from the oven and let cool. 

2. Peel beets and red onion, and dice into 1-inch pieces. Place in a bowl. Add the garlic.

3. Dice roasted pears into ½ inch dice. Add to the beet mix. Toss together.

4. Add the pepita seeds to the salad.

5. Drizzle the olive oil and lemon juice. Season with the salt.
