Chef's Corner: Infusing Flavor Into Low-Fat Food -- Smart Recipe

Pineapple Pepper Shrimp

  • 1 fresh pineapple
  • 1 package fresh shrimp
  • Lemon-lime pepper
  • 1 jar habanero or jalapeno jelly
  • 1 package freshly chopped cilantro
  • Butter

Directions:

For this tasty appetizer, you need several chunks of fresh pineapple, fresh shrimp, a lemon-lime pepper, habanero jelly (or jalapeno jelly), freshly chopped cilantro and (just a little) butter.

First, butterfly the shrimp and coat with lemon-lime pepper flakes (make your own lemon-lime pepper with chopped lemon and lime peel, coarse ground pepper and coarse sea salt). Set aside. Next, put a small pat of butter in a pan. Add the pineapple chunks to the butter and listen for that sizzle! The natural sugar in the pineapple caramelizes the food -- creating a whole lot of flavor! When the pineapple starts to brown, remove from heat. Put the pineapple on a plate and sprinkle with cilantro -- set it aside. In the same pan, throw in your peppered shrimp and cook through.

To plate this delight: stack a cilantro-topped pineapple chunk and a zesty shrimp on top of a dab of pepper jelly.
