Chicken Mario
- 2-3 chicken breasts
- Flour
- 1-2 flavorful peppers
- 1 small sweet onion
- 1 package fresh mushrooms
- 1 small tomato
- 1 fresh garlic clove
- Extra-virgin olive oil
- 1 bottle Marsala wine

Directions:
First, slice two or three chicken breasts into strips. Lightly flour them and pat the excess flour off the chicken. Slice and set aside: one or two flavorful peppers, one small sweet onion, a handful of mushrooms, one small tomato and a fresh garlic clove.
Heat extra-virgin olive oil in a pan. Add the chicken, cook through and set aside. In the same pan, add the onion slices (these take the longest to cook). After a minute or two, add the peppers. After the peppers start to soften, add the mushrooms and throw in the garlic. Add the tomato last. Heat all the veggies together and then pour some marsala wine in the pan. This forms a light, but tasty, sauce. Add the chicken back to the pan to coat with the sauce. (If you want more sauce, add more marsala wine!) You can serve with rice, pasta or by itself. This low-fat dish is full of flavor!
