Chef's Corner: On the Wild Side -- Smart Recipe

Cucumber, Tomato, and Red Onion Salad

  • 1 English cucumber
  • 1/2 red onion, sliced very thin
  • 1/2 teaspoon coarse salt
  • 2 tomatoes, cubed
  • 1/4 pound arugula
  • Coarse salt, freshly ground black pepper, to taste
  • Vanilla Dressing
  • Melon Vinaigrette

Directions:

Cut cucumber in half, seed, and slice fine before placing in a stainless-steel bowl. Add salt and mix well. Let the combination sit for a half hour at room temperature. Drain water from cucumber and mix with onions and tomatoes. Add 1/4 cup of vanilla dressing (save the rest) and season with salt and pepper to taste. In the center of a large plate, combine the tomato, cucumber and red onions, and drizzle two tablespoons of melon vinaigrette around them. Top with arugula soaked with two tablespoons of vanilla dressing.

Serves 4
