Chef's Corner: Pastry Artist -- Smart Recipe

Spiced Oranges in Caramel Syrup

  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • Spices: cinnamon stick, star anise, dried whole cloves
  • 4 oranges
  • 1 1/2 cups orange juice

Directions: Heat the sugar with lemon juice stirring constantly with a heat resistant spatula or wooden spoon. The sugar will gradually melt and begin to caramelize. Keep stirring until all the lumps of sugar have melted. This may take a few minutes. If the sugar is getting too brown in color just reduce the heat. Warm the orange juice and add to the caramel. It may seize up but keep heating and the sugar will dissolve. Add the spices. Cut the skin away from the oranges so the pith is also removed. Cut into slices or just cut away the orange segments. Add to the hot syrup. Turn off the heat and allow to cool. Serve in a bowl either by itself or with sponge cake and ice cream.
