Shrimp and Goat Cheese Phyllo Cups
- 16 phyllo cups
- 16 medium shrimp, cooked
- 8 oz goat cheese
- 2 oz green onion -- fine dice
- 2 oz roasted red peppers -- fine dice
- Add salt to taste
Makes 16 servings |
Directions: Prepare phyllo cup by combining three layers of phyllo, brushing each layer with melted butter. Cut out circles and mold the phyllo over upside-down mini muffin tins. Bake in a 350 degree oven until golden. Combine goat cheese, green onions, red peppers, and 1/2 of the shrimp diced up. Fill phyllo cup with mixture and garnish with a piece of shrimp on top.
