Bohemian Walnut Cake
3/4 pound butter
3 cups granulated sugar
8 eggs separated
3 cups pastry flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk
1 1/2 teaspoons vanilla
1 1/2 cups coarsely ground or finely chopped walnuts
Directions:
Thoroughly grease two 8-inch round cake pans.
Cream the butter and sugar together. Add the egg yolks. Sift the flour, baking powder, and salt together.
Add the buttermilk to the butter, sugar, and yolk mixture, alternating with the flour mix.
Beat the egg whites till stiff but still wet. Fold into the batter and fold in the chopped walnuts.
Fill the greased 8-inch cake pans two-thirds full and bake 35 to 40 minutes.
