French Fare -- Smart Recipe

Greens Vinaigrette and Roasted Walnuts

Vinaigrette for the Greens:

  • 1 1/2 teaspoon dijon mustard
  • 1 teaspoon pulped shallot
  • 1/4 cup champagne vinegar
  • 3/4 cup walnut oil

Roasted Walnuts:

  • 1 cup broken walnut meats
  • 1/2 teaspoon walnut oil
  • 1/8  teaspoon Kosher salt flakes

Directions:

Vinaigrette for the Greens

  1. To pulp the shallot, pass a whole peeled shallot over a fine grater and scoop the pulp from the other side.
  2. Place pulp in a mixing bowl and mix in the mustard and vinegar.
  3. Gradually whisk in the oil.

Roasted Walnuts

  1. Pre-heat oven to 300 degrees.
  2. Toss walnuts with oil and salt.
  3. Lightly toast at 300 degrees for 12 minutes.
  4. Reserve for assembly.
