Bittersweet Chocolate Truffles
6 ounces bittersweet chocolate bars, chopped into pieces
1/4 cup soymilk
1/4 cup port or orange liqueur
1/4 teaspoon chili powder
2 tablespoons cocoa powder
Directions:
Prepare a small saucepan with lightly simmering water. Make sure you have a bowl that will fit in the top and not touch the water.
Melt the chocolate in the bowl.
In a separate saucepan, heat the soymilk, liqueur, and chili powder to boiling.
Whisk the boiling liquid vigorously into the melted chocolate until smooth.
Refrigerate until it hardens.
Use a small scooper or a tablespoon measure to scoop the truffle mix into balls.
Roll in the cocoa powder with your hands.
